I have 10 years making pizza and working for someone else. I want to get my own place. Can a private pizza place make it or should I look at franchises?

Why pay someone to tell you how to run your business? I looked at franchises and found I could go it on my own and save the franchise fee and royalties. One thing that kept coming up when I talked to my accountant and banker and lawyer is “buying a franchise is just buying yourself a job, you will always have someone telling you what you can and can’t do.”
