I would like to know wich kind of oven is better for a starting pizza store? CTX ovens (infrared technology) or Middleby, Lincoln (conveyor ovens)?
I have never heard anything good about CTX ovens- even with today’s high priced natural gas- I think gas, if available is the better buy. Go Middleby or Lincoln.
I used a CTX years ago and it constantly broke down. Rumor has it they are better now, but I totally agree with Andres there. Go with Middleby. My lincolns broke down last december and I replaced them with a Japanese bersion of a MM oven.
