Hi John,

I am having problems of too much oil coming off my cheese and I am using a deck oven at 500 to 550 for approx 10 min ( thin crust ) and am using 8 diff chesses from Grande to kirkland skim.
any suggestions?

Bill - Generally speaking, to get less oiling off, use a cheese with lower butterfat content. Also, the degree of aging can have a slight effect on oiling off. You might try cheeses of different degree of age, if possible.

Also, you might experiment with different baking times and temperatures. Try longer bake times (with lower temps) and shorter bake times (with higher temps). See if that makes a difference.

That’s all I know to suggest.
