I am trying out a Univex pizza spinner next Monday at the Ferraro Foods show. Our Ferrero rep says that you don’t have to change anything in your dough recipe because the machine spins the dough on felt pads rather than pressing the dough like a typical pizza press. The spinning is meant to mimic the hand motions of a pizza maker.
We are bringing our own dough to the show to test it on their machine. I am always skeptical of products that promise too much, we’ll see. Is anyone here using this machine? It definitely doesn’t look fast enough to handle a busy dinner rush, but it might be useful to supplement a couple experienced pizza makers.
