I’m looking at purchasing a 20 year old galvanized type 2 pizza hood with a 3 year old blower fan motor. Anything wrong with galvanized vs stainless steel?
Many jurisdictions will not allow galvanized. Check withyour building and health departments.
You may also find that you need tempered make-up air as per current zoning laws that have been changed a few times in the last 10 years.
If you’re lucky, you may be able to get away with a short-cycle hood with untempered make-up air.
Without make-up air, you’ll suck all the conditioned air out of your place rapidly, the doors will be difficult to pull open, and every single insect within a few feet of an open door will also be sucked inside.
