garlic powder vs fresh garlic in sauce

do you use fresh garlic or powder garlic?

What would be the conversion chart?

We use arrezzio chopped garlic and carmelize it by running it through the over 2-3 times before putting it in the sauce.

fresh vs dried herbs is roughly 3:1
garlic may be more

I use granulated roasted garlic. I prefer the granulated for more even dispersal, and the roasted makes a huge difference. Granulated keeps longer on the shelf, too! :smiley:
