Very nice dining room.
Lemme guess - you do a “full bag” batch (50 lbs flour) of dough in a 60 qt. Hobart, yes?

thats funny you say that

we used to do the 50 lb bag, but it was too hard on my mixer. so now we do 25 lbs

im not a big fan of cleaning the out side of the hobart. It really does not hurt anything having flour on it.

my health dept would never allow the sink next to the mixer

also your wood bakers table would never fly

Whats wrong with my wooden tables??

we only use them for cutting dough. and cutting pizzas

also the sink is fine to me.

the last instpection i only missed 8 points.

3 for not having the under cooked meat warning on the menu, and 5 for having some cheese and flour on the floor after a rush. Which i tried to explain that its hard to make pizzas fast and not drop some stuff on the floor.

Also we have a huge menu

It includes

7 burgers Black and blue, bacon, cheese cheese burger, mushroom swiss, a-1 pepper corn burger, black agnus dip, teryaki burger
9 subs Philly, french dip, torpedo, chicken chedder club, club style, meatball, cordon blue sub, veggie sub
13 pastas Homemade lasanga, eggplant parmesan, baked penne, penne puttenscua, spahegtti marinara, meatballs, itailia and spahegtii sicilan(spicy)
6 salads Antipasto salad, chicken caeser, meditreain salad, cobb salad, house salad, chicken salad platter, spicy bufflao chicken salad.
20 some pizzas etc…

4 beers on tap
wine by the glass and bottle.

You cant have wood bakers tables? I didnt know that was a problem anywhere. Ghey are very common in all restaurants around here. What is the reasoning behind not allowing them where you are?

i am not trying to be a jerk or anything…I used to have the same table back in the day to cut the dough and it actually works much better than stainless steel, but unfortunately it is not considered an approved surface for today’s standards due to cleaning and chipping I presume…the sink might be allowed i fit had side splash guards, but not as it is right next to a food production source…they made me put splashguards next to handsinks next to prep tables.

That’s got to be local - my wood baker’s table is fine.
And my last TWO health inspections both say “NO VIOLATIONS FOUND”.
Sweeeeeet. Posted that on the wall…

My health department lady, is hella cool to me.

She has never said anything about the wooden talbes or the sink next to the mixer.

i dont see a prob with it, we just wash produce in that sink

yep i even have a wooden chop block which they say nothin about :slight_smile:
