I’m doing a pizzeria project. I have experience working at pizzeria but my project would like to improve some departments, especially how to sell pizzas (I can post it if you have curiosity).
I will ask some quiestions:

How is your process to open the dough? (Pass ball to pizza dough).

Do you have electrical or gas oven?

Do you have conveyor oven? If so, many?
Later, I post my dough recipe and I would like listen to your opinion.
