How many 16 ounce dough balls can I expect to put in each standard 18 x 26 dough box or same size bun tray ?

OTIS, I PUT 8-13oz AND 6-19oz DOUGH BALLS YOU MIGHT ONLY BE ABLE TO GET 6 SO THEY HAVE ROOM TO PROOF UP

I just saw on PMQ’s PizzaTV a template for the dough boxes and it had 8, 3 a side and 2 in middle.

BTW, very good video, I was pleasantly surprised.

We do 8 15oz dough balls in tray, and 6 20oz doughballs per try. Just as you described - 3,2,3

Could anyone tell me what the dimensions are for your dough trays?

dough trays and full bun trays are both approximately 18" x 26".

I am considering getting one of those True(others may make them also) “roll-in” refrigerators where I can stack abour 20 of those plastic dough trays on a dolly and roll them in.
