I live in central TX, duh? Good recipe for Italian sausage?

The only really good meat here is TX BBQ (not even good Andouille can be found), anyone have a good mix for italian sausage?

Good story, up north (2 hr drive from Chicago), these two guys from Chicago would make a weekly trip to our pizza place, and everything would be in the trunk of their car, cooler where necessary, and they had the ABSOLUTE best sausage/proccuito/cheese that could be found in blands ville w. michigan. (and this ricotta with a stamp on top of it)

Can’t be found in central tx.

Get some Johnsonville Italian sausage. The mild and hot are pretty darn good.

here’s a simple recipe that will make you some great sausage.

100# ground pork butt
4 cups whole fennel seed
2 cups salt
8 oz. ground black pepper

mix well
