I want a general consensus of Gas or Electric Conveyor Oven

I’m a student doing a research project and want to hear directly from pizzeria owner/operators:

Do you prefer gas or electric conveyorized ovens?
Why?
Which one is more efficient in your opinion?
How do energy expenses effect your business?

Bake quality is the key consideration not cost. So, efficiency is nice but secondary. Overall energy cost (gas & electric) is less than 2% of sales so any variation would be a rounding error. Not that I do not seek to save $$ where possible… this is not an either/or choice that would be driven by cost.

We prefer gas.

Hi Trubake:

Our experience is that gas fired ovens are best

Less costly to operate.

Heat recovery time is shorter.

When gas is burned moisture is created an helps to keep the product from drying out.
