Yes, gross sales are pretty worthless - the only reason to know what your gross sales are is to determine what your discount % is and also what your food cost would be based on menu price (gross) sales. Gross sales don’t go to the bank. Net sales do

I have also encountered people (business owners even) the thought gross sales were including sales tax! I agree it is important to track what we are doing with coupons to see how much of that resource we are using to drive the train but for the purposes of discussion about labor cost or food cost or occupancy expense there is just one “sales”. People can call it net sales if they want to.

“Sales” = The price the customer paid not including sales tax.

I know it has some use when a place does some crazy half off things and they want the their labor to go off gross sales. I’ve never used it
