I had california pizza kitchen pizza the other day, I like their crust, it is kind of sweet. Do you know what they use in it to sweeten it and if i was trying to duplicate the flavor what % of sweetner would I need in my dough and will adding extra sugar make my dough act differently, other than browning sooner. We do retard our dough in the cooler for 1 to 3 days.
