Need help on par frying chicken.

I have a pressure fryer. currently coock legs@350 for 12mi… and thighs,brst for 16 min. potato wedges @350 for 6 min. I realy need to find consistency and start doing par fry then fry to order.
Your input please!

you won’t be happy w/results if you try to “par-fry”…

if you are trying to time chicken w/pizza orders, get a humidified holding cabinet or warming display & cooked chicken should last 45+ minutes…
