Hi guys im working on our new menu and i have a bit of a recipe query with parma ham. Im doing a pizza with parma ham, smoked cheddar, mozzarella, black pepper and rocket. Should the parma ham be added before or after the pizza is cooked? I have noticed recipes for both methods so i just thought id get a few different perspectives.
We do one with smoked ham and it goes on after the sauce and mozz base with Haloumi cheese as the topping, and a light mozz sprinkle over the top then add the rocket after the pizza is cooked.
We also do a prosciutto and pear pizza, again with the prosciutto added after the sauce and base cheese, then the pear and a light finish sprinkle of mozz. When it comes out of the oven it is dressed with rocket and a drizzle of garlic oil.
Each time the ham goes on at the bottom.
Its a green leaf / lettuce sort of thing.
