besides lemon juice and red wine vineagar what are some other common liquids to put in pizza sauce?

since I started using all fresh packed crushed tomatoes, 6N1 or 7/11, I have not added water…
It dawned on me that I was adding back the water from the tomatoes that the packer had “concentrated” out.
It costs more and is worth it to me for the simplicity and consistent whole tomato flavor.
There is a gourmet/organic chain that I understands just uses only the Escalon 6N1, the organic version, possibly lightly seasoned as I do mine.
