Scanning Invoices/Paperwork

Does anybody electronically store your invoices/employee info? Is there any law that says it has to remain in paper form, or does electronically storing documents satisfy the requirement of keeping them?

Scanning is not a problem, the standard is that it must be produced on request. However, I wouldn’t discard any of the original paper, just store offsite. Also, you have to keep the actual signed I-9s and they must be stored apart from the rest of the file.
