What is the refrigeration life of hard cheesees and meats (asiago, pecorino ramano, parm. regiano, sliced proschuitto, soppressetta, etc…)
Each product will have a different shelf life depending on its processing. Even two prosciuttos will be different depending on the curing and preservation properties. You should be able to contact the distributor or the manufacturer to ge tthat definite information.
In general, though, cut meats I would not go past 7 days in cooler.
