Size of pizzas and volume?

Could you guys list the sizes of the pizzas you offer and the percent of volume each generates (percent of total pizzas sold and not of total sales)?

I chose not to offer a Small 10" pizza, because it’s on odd size IMHO. Too big for one and too small for two. I have no problem upselling people from our personal 7" pizza to a 12" medium.

12" 12.5%
16" 72.5%
18" 15%

We sell 12" (8 cut) for $9.45 and 16" (12 cut) for $10.75
15% on the 12" and 85% on the 16"

Our goal is not to sell smalls!! We upsell the small by telling them “For only $1.30 more you can get another 4 cuts of pizza” They usually do :wink:

Doing some rough math on cost per square inch, it looks like your FC is dramatically better on the 12" pizza. Rather then upselling them to the 16" pizza, what about pushing a low cost and low fc side item like Breadsticks to boost the check average AND the bottom line!
