Specialty Pizzas

Is anyone having any luck menuing specialty pizzas…like BBQ, Buffalo, Hawaiiian??? Are they easy to make?

As a consumer, and hopefully soon to be pizzaria owner, I like the “special” pizzas my local place offers. Hawaiin, Garlic/Tomato, and the 4 cheese white pizzas are my favs. I don’t mind paying couple extra bucks over the traditional types.

One of my best sellers is a BBQ chicken. I have good luck with Tropical Chicken too.

What’s up with all the people liking the chicken? One of our best sellers is the “Hawk -N- Cheese”. Can’t tell you what’s in it but creative people would look at our website in the “menu” section… just a hint. -J_r0kk

We have a Ranch pizza that is popular. We also have Lemon Pepper/Chicken, Alfredo w/spinach or chicken and a Firehouse Pizza that not too many have tried but it gets alot of comments!! BBQ chicken is also a favorite.

Since I am now out of the pizza business, and will likely never return, you can have all the specialty pizza recipes I dreamed up. By dreamed up I mean I literally started thinking these up off the top of my head… “what can I put on a pizza that uses a different sauce?”. I really wanted to break away from using regular pizza sauce and throwing odd-ball toppings on it.

This is my original list that I made while testing each one and getting ready for an open house taste testing that we advertized. The egg, brat and turkey ones got dropped due to popular unpopularity. Some of the recipes were tweaked over time to facilitate easier ordering and stocking of items.
The (name) was cute names that I came up for each one, people seemed to like it. Use whatever you want, there is no other place that I know of that has these specifically (some are very close to other popular SP’s).

Big sellers were the P3, Bravo Italiano, Aphrodite’s and the Chicken Little was hugely popular. The Vegan got a lot of comments but I was never able to get a recipe that worked well… seems to be quite a few Vegans out there. Some suggested frying the tofu, but I never got that far.

1) Pulled Pork Pizza (P³)
Sweet baby Rays BBQ sauce
Moz - lite
Pulled pork from pre-cooked ribs
Red onions
Moz - med but don’t cover

2) Steak n Cheese Pizza (Cow Cow)
A1 Steak sauce - lite
Cheddar cheese
Steak (broiled cube steak seasoned with olive oil and A1, cut against the grain in thin slices)
Mushrooms
Onion
Cheddar cheese - lite
Butter crust and sprinkle lite seasoning salt

3) Spinach Artichoke Mushroom Pizza (S.A.M.)
Alfredo sauce
Moz - med
Button mushrooms (marinated in vinegar and olive oil with garlic and herbs)
Artichoke hearts (marinated - trim leaves off and quarter hearts)
Red onion
Spinach (frozen - thaw and dry - spread thin even layer of spinach)
Moz - lite

4) Roasted Redskin Potato Pizza (the Washington)
Alfredo sauce
Moz - med
Redskin potatoes (wash - slice very thin then halve if needed - roast with olive oil, garlic powder, salt, dried basil and dried chives for about 3 to 5 min - stir several times)
Red onions
Bacon
Moz - lite
Dried chives for color
Butter crust and sprinkle lite garlic powder

5) Salmon Caper Pizza (Fishy d’oeuvre)
Cream cheese (Philly - warm up so it will spread easily)
Moz - med
Salmon (prep: broil salmon fillet with liquid smoke, peel skin and chunk with fingers)
Capers - lite - spread evenly
Red onion
Moz

6) Buffalo Wild Wing Pizza (the Spicy Nickel)
Franks hot sauce - med
Chicken (chunks of broiled white meat chicken)
Moz
Franks (artistic swirl - lite)
Butter crust and sprinkle lite celery salt

7) Hamburgers n Hotdogs Pizza (the Summer Grille)
Special sauce (mayo 3, catsup 4, mustard 2)
Cheddar cheese
Ground round/chuck on 1/2 (pre-cooked)
Hot dog on 1/2 (sliced thin and broiled for 3-5 min)
Onion (optional)
Cheddar cheese - lite
Relish - lite
Butter crust and sprinkle sesame seeds

8) Bratwurst Pizza (Bratzza)
Grey Poupon (mix with mayo 2:1)
Moz - med
Bratwurst (broil for 5-8 min then slice thin)
Red onion
Moz - lite
Catsup (artistic zig zag for color)

9) Greek Salad Pizza (Aphrodite’s)
Greek dressing
Lettuce
Tomato
Red onion
Black olives
Feta cheese
Moz - lite (to hold it together)

10) Quesadilla Pizza (Mexican Sun)
Salsa - Pace - lite
Hamburger (pre-cooked with taco seasoning)
Cheddar cheese - heavy
Tabasco sauce (thin line in two circles, one in center and one in middle of pizza)
Jalapeño’s on the side
Butter crust and sprinkle hot pepper flakes

11) Turkey Pizza (Turkey Day)
Turkey gravy
Moz - lite
Turkey (sandwich turkey sliced thick and cubed)
Carrot
Potato (redskin chunks)
Stuffing (from mix)
Butter crust and sprinkle celery salt.

12) Scrambled Egg Pizza (Top O’ the Mornin)
Butter dough
Egg (pre-scrambled in skillet)
Cheddar cheese - med
Bacon
(can add ham, mushroom, green pepper, onion, Italian sausage)

13) Cajun Pizza (Bayou B.Q.)
Alfredo sauce (mix in cayenne and black pepper)
Moz
Chicken (cooked with BBQ and Tabasco sauce)
Garlic (fresh chopped)
Chives
Cajun salt
Butter crust and sprinkle Cajun salt

14) Chicken Feta Pizza (Bravo Italiano)
Regular pizza sauce

Sun dried tomatoes

I took them as I was making the pizza’s. I’m also a web designer so, at one time, I had a really nice web site up for the place.
The new owners don’t seem interested in the web site (even though we left the vinyl URL stickers on the doors) so I will probably let it expire next year.
