x ounces dough makes x inches pizza? I know, lots of variables, but general rule of thumb?

for hand tossed crust, I use:
14" = 14 oz
12" = 11 oz
10" = 8 oz

for thick crust hand tossed, I use:
14" = 22oz (2 11 oz balls smashed together)
12" = 16 oz (2 8 oz balls smashed together)
10" = 14 oz

I use for hand-tossed (closer to NY style than Chicoago style), I use generally .115 ounces of dough per square in of pie. Doing the math we get

  • 16" 23 ounces
  • 12" 13 ounces
  • 10" 9 ounces
