Time and Temperature

What time and temperature do you cook your pizzas for?

We have a MM 40" conveyor oven, Use Lloyd Pans Quick Disk with Clouds and cook at 260C for 6mins 20secs

Pizzas and Wings are coming out fine, but the pizza looses its crispness quite quickly.

I seen in another thread to try to cook longer ( perhaps at a lower temp ) and to remove sugar from the dough, which I will try in my next batch.

Just want to get an opinion on my Set up.

We run 8:45 @ 460 w/a little sugar in the dough

I tried Loyd’s and bought the wrong hole config. Now I use the hex design so there is more exposure, problem solved. 400 degrees 7 minutes 39 seconds, perfect.
