Tomato Creme Suace

Does anyone have a good, orangy color, tomato creme sauce for over meat tortellinis? An old school buddy of mine had a father that owned Pizza Shops. He made the best tortellini but he’s been gone for years and my buddy didn’t carry the tradition.

Think Vodka Sauce


1/2 cup of olive oil
1 tsp butter
2 garlic cloves, minced
1/4 cup fresh parsley
1/4 cup onions choped
1 large can whole peeled tomatoes
1 pint heavy cream
1/2 cup vodka
salt and pepper to taste

In a sauce pan, add oil, butter onions and garlic. Saute until onions are clear.

Add vodka, tomatoes and parsley. Slowly mix in the cream.

Salt and pepper to taste, add pasta, sprinkle with Parmesan cheese and serve.

Man, that Vodka Sauce looks great! I gotta find a way to get that into my processes soon.

For a quick and dirty “rose” sauce, you can use 1:1 red sauce (whatever you are using now) with an alfredo or other sort of cream sauce. It ain’t classy like what the Patriot gave us, but it can get you in the door quick.
