Warming cabinet settings

Does anyone know the right settings, or even if I should have a high temperature and low humidity or vise versa or some other combination.

My health inspector says temperature has to be at least 150 degrees and does not care what the humidity is at.

For pizza it should never be more than 175. I have one set to 170.

Our clients set temperature 150 to 170 most on the higher side. Moisture depends on the product and varies widely as do products. Experiment!

we keep ours at 160 and we do no moisture at all seems to well for us
