I would like some guidance on the size of pizza pans I should buy. I plan on offering Sm Med Lg. Also if they are bought new any tips on seasoning the new pans
Go to http://www.pizzatools.com/ their pans start at 6" and go up to 18" in one inch increments. You can get them in a tough coat or season them your self.
I Have 4 sizes 8", 10", 12" and 14". I have 50 each of the 8" and 10" and 100 of the 12" and 220 of the 14". I did my own seasoning as it is less money. To season the pans I brushed them with canola oil and ran them through the conveyor oven for 12 minutes at 450 degrees then let them cool.
