What size proofing pan to use?

We want to move from dough boxes to the aluminum dough proofing pans (ALDP-48). What size proofing pan do I need for a 20oz. ball?

Also, beforw I design one, does anybody know of a manufactired dolly for these individual pans, or some kind of holder so they won’t topple over in the walk-in??

You could stack them in the empty dough boxes and put them on a dough box dolly :wink: Sorry I couldn’t resist. I am not sure about your question but I was wondering why you are changing over? How many 20oz balls were you getting in your dough boxes? Is it just a space issue?
