What was your most important discovery at this years Pizza Expo 2014?

If you went to Pizza Expo this year what was the most important thing you learned? Were there any trends you spotted? Was there a best new product you would recommend?

To me the trend was a Neapolitan pizza.

i just went to Mario Batali’s place here in Chicago. http://www.eataly.com/chicago what a weird place and the food was hit or miss but the Neapolitan pizza was probably the best pizza I’ve ever had and yes the 12" pizza was $25!
