2440 vs 1832

I have a two XLT 1832s in my current store. We are doing $11-$12k a week with them. I think we could do more with bigger ovens, well maybe not more sales, but provide faster service. I can do the calculators to figure out each size differance, but what it really comes down to is during our busiest times 5-7pm am I going to be able to increase the volume by enough to justify the cost. The 1832’s will go to my new store and the new 2440 will go to my current store. Space is an issue, my store is designed pretty bad for large ovens.

If you go to larger ovens in the existing store it may require a larger hood.
Suggest you stack a third oven in the current store and put the new ovens in the new store.

If your new store is not under construction I suggest you design for at least a 32 40 oven our experience indicates that sales increase to match production.
