30 QT dough recipe

I’m looking for a 30 QT dough recipe for pizza for a bakers pride y-600 oven. Can anyone help out?

You can use any of the recipes in the Recipe Bank http://www.pmq.com/Recipe-Bank using bakers percentages. here is a good all purpose dough http://www.pmq.com/Recipe-Bank/-Basic-All-Purpose-Pizza-Dough Your best bet is to use 25lbs of flour for 30Qts

Might I ask what kind/brand of 30-qt. mixer you have and what type of dough agitator does it have, assuming a planetary mixer it would be either a straight “J” arm or a reverse spiral mixing arm.
