Hi Tom,

You use compressed yeast in a lot of your recipes. How do I convert the % to the type of yeast I use which is Instant?

To convert from compressed yeast to instant dry yeast (IDY) just divide the percentage by three, or divide the weight by three. Said another way, use 1/3 as much IDY as you would compressed yeast.
