Right now we use a super old Lincoln 1000 that is literally held together with wire and a shoe string and two quarters it works well but its tired and we want new ovens the Lincolns are set at 830 for the time and 460 temp for our pan pizzas

The wow claims to cut bake times by 30% or so. Which would be.great if we could get pizzs out in 630 or so. Does anyone have any.experience with th
Wow ovens. The small lincolns set at 830 get really backed up we do about 13-16 k a week right now and the busy nights get.really backed up

Be sure to check out the recent “In Lehmann’s Terms” archives for my article on the new generation of air impingement ovens.

If I recall correctly Toms article rates the Middleby, Lincoln, Edge, and XLT ovens equal.

Other considerations: The Lincoln and Middleby are more costly with the WOW oven the highest.

The edge and XLT are about the same price wise. XLT has the best warranty at five years.

We sell almost exclusively The XLT when selling new. Our experience has been excellent.
