bottom of Pizza over cooked, light black color

I have a Middleby Marshal oven, my deep Detroit style deep dish is perfect but I am having problems with my round pizza , the bottom is light black , I have tried all kinds of temp and time adjustments but still the same , we even redused the fingers in the oven from 4 to 2 on the bottom but still the same so I am thinking its got to be the recipe ? here is my recipe

1/2 cup sugar
1/4 salt
1/6 yeast
4 85 oz of bouncer flour
4 quarts of water

Not sure if this is your issue… If you have extra dry flour on the bottom of the pie, it tends to burn.
