We just use the oven rake and broom regularly during production to keep the oven clean, and at the end of the day we work the stones over pretty thoroughly with the rake and brush out the residue. No rotating of stones.

Have you ever had to rotate those suckers? HEAVY!!! The stones are pretty much self cleaning with a little help from the brush/scraper. We leave our ovens on Friday nights to give them a chance to really burn clean.
