Buffet or Bar

I may have the opportunity to purchase an existing store that has a non-operating salad bar. The buffet itself works but a piece of the glass is missing. Im told it is about a $500 fix( so i assume it is more like 750-1000). Ive been doing pizza for 15 years but have never done buffet. It is a large enough area that it could be converted to a 6 person bar. This would be a beer and wine bar. My goal is not to have a “bar” but a comfortable place to sit and enjoy a beer. My 2 questions are:1)operationally obviously a bar increases labor and a buffet increases food cost witch would be most controllable and 2) what would you rather do…i’d just like to hear honest opinions from some professionals.

I certainly would not suggest putting in a salad bar simply because it is there. As you said, increased labor, supervision, food cost etc.

Given today’s labor market, I’m all about making an operation as simple as possible.
