Cheese prices back up?

our cheese price was down by half 2 weeks ago and the block cheese market is still down by half from 2 months ago. However, Sysco is back up to the original price even with the block cheese market down. Is anyone else seeing this problem? Sysco says it’s from the demand of motz from all the pizza places open still

We use two different suppliers and are getting drastically different pricing from each. It’s usually pennies apart, but now it’s 10-20 cents. My guess is that in your case, Sysco is still unloading cheese they bought a while back at higher prices, so they’re charging more. Once that stock dwindles the price will come down. Just a guess.
