Detroit style pizza

Does anyone have a good recipe for Detroit style pizza do you use all purpose flour or a high gluten flour

I don’t recall ever having a pizza in Detroit, but we do all of ours Chicago style (real Chicago style… like they make out in the 'burbs, aka thin crust) and use high gluten flour.

Here in Detroit, I know that the cooking process is just as important as the ingredients list itself. They use seasoned blue steel pans with lids and they cook only in deck ovens. As you most likely know the sauce gets placed on top of the brick/mozzarella cheese at the end. I am unaware of what type of flour is used, I would imagine a mid-high gluten level. I grew up down the street from Buddy’s Pizza and love the style. Good luck!
