Here in Detroit, I know that the cooking process is just as important as the ingredients list itself. They use seasoned blue steel pans with lids and they cook only in deck ovens. As you most likely know the sauce gets placed on top of the brick/mozzarella cheese at the end. I am unaware of what type of flour is used, I would imagine a mid-high gluten level.
