Dough Help, making spinich pockets

I am using Big Daves Old Faithful dough recipe

and I am trying to use it to make spinach pockets, cold spinach pockets!

my hope is to run the spinach wrapped in 4oz of dough partially through the oven, then pull, chill, and saran wrap
label and then sell out in my lobby.

Would this dough work for this type of item. if not what would work
