dough press

does any one use the dough pro dual heat press?
i have one and cant seem to get it to form a skin that i can work with.
if i run the heat i get tearing,if i press cold i get snap back,if i let my dough proof to room temp i cant get the skin off of the plate without miss shaping of the formed skin,I AM ABOUT TO THROW IT OUT THE WINDOW
i have tried using dough relaxer,no improvement.
 
My experience @ CiCi’s taught me about dough presses…I sold the 1st one I had yrs ago because I couldn’t get it do funtion 2 my satisfaction…

I believe the trick is to use aged, proofed dough and to keep the press down for 5-10 seconds…

you will still need to hand-form it onto a screen…you get good enough, so while 1 is being pressed, you’re forming the other on the screen…

start w/one edge of the dough matched up w/the edge of the screen…

gently pull the dough around the edge to match it up to the edge of the screen…

CiCi’s then docks the dough and it is ready for topping…

it was real hard to get the hang of it, because I’m a hand tossed guy…always wanted 2 take it off the press & toss it…
