Festival inventory planning

hello, we’re a mobile wood Fired Pizza oven getting ready for a large weekend event. We’re the only pizza vendor. Weekend attendance average is 50,000. Any advice on projecting a total number of estimated pizzas sales so we can project inventory?

Good for you and… no, unfortunately. First time is always tough… maybe some people with event experience can help. So many variables, though…

There really is no way to answer this as there are so many variables. Your placement, speed and pricing will be some of the most important considerations. As a mobile wood fired pizza I would assume your ticket price will be high? Does that fit with the attendees of this festival? Have you attended this festival before? Do you know where the traffic will be and if so, can you pay extra to be there? If a line starts to form, how long will it take to order and get served? Do the attendees know your product? These questions and many more can be the difference of wasting your weekend(learning is never really a waste) or having the best weekend sales ever.

A couple suggestions: If the festival will allow you to sell water, don’t get greedy with the price. Everyone else will be selling waters for $2 or $3. Pick up 40 packs of 16.9 oz waters from Sams Club and sell them for $1. You’ll be making 90 cents per bottle and keep busy even when not selling pizza. But when someone is hungry, they’ll be more likely to remember that you didn’t price gouge them on the water they bought earlier.

If you’re not already set up with Square or PayAnywhere, do it now. You’ll be surprised how many people can’t order if you only take cash. Wal Marts in Florida sell the Square readers and they can be set up in 10 minutes.
