Food Pans-Plastic or Aluminum?

Is there a difference in how well the food is kept?

I’ve always used aluminum only, I thought everything stayed cooler, the issue is for some reason my aluminum pans never fit properly in my sandwich unit. I have to search for special adapter bars to make the pans fit properly.
I just bought a new sandwich unit and Im thinking of buying all new plastic pans just to make them all fit properly.

Fit always triumped for us. Long term it kept food cooler longer. We used original manufacturer pans

I use plastic with no problems. Although metal does cool down faster.
