Fresh yeast to IDY conversion...

Tom, I saw your article in the latest PMQ about IDY and goodie bags for dough. What would the conversion be from fresh to IDY? Also, for the goodie bags, using IDY can we also put the IDY, salt, and sugar together?

The conversion of compressed yeast aka wet yeast to IDY is to use 40% as much IDY as you do CY. so if you are using 16-ounces of CY and want to replace it with IDY the math looks like this: 16 X 40 (press the “%” key and read the answer in ounces of IDY needed. 16 X 40% =6.4-ounces (call it 6.5-ounces).
Absolutely no harm in putting the IDY into direct contact with other dry ingredients such as salt and sugar, truth is they will actually help to protect the IDY in its dry form by keeping any moisture away from the IDY. We have been doing this commercially for over 30-years now.
