We are looking to purchase a 40 qt Hobart mixer to replace a 20 qt Berkel mixer. We have 3 phase power available in our bakery. We are considering a new Hobart Legacy 3 phase planetary mixer and a used Hobart 3 phase D340 that is 15 years old.
Are the new Legacy planetary mixers as reliable as the older models? Primarily mixing cookie dough.
