I run 1 register and 4 phone stations. I could probably benefit from a second register, but manage with 1. A lot really depends on how many phone lines you have, any sit down and what kind of numbers.
6 order taking stations, 3 of those have registers (pickup, drive thru, ice cream). 1 also doubles as driver dispatch station. Plus 2 kitchen monitors and 1 kitchen printer.
