managers bonus based on labor and food cost%

Who gives managers bonuses based on food/labor costs? If so, how do you calculate these bonuses?

Here’s what I offer (and will offer once we open the other stores):

Manager bonuses are a possible 20% of NET profit. Supervisor bonuses are a possible 10% of NET profit (supervisors oversee 4-5 stores). NET profit is after E.B.I.T.D.A.

…Bonus Structure…

Sales over budget…20%
Labor within budget…20%
Food within .5% of ideal…20%
Service…20%
Product…10%
Store Cleanliness…10%
