Need help with my deck oven(is there any oven doctor?)

i bought a GAM deck oven from ility GAM (www.gaminternational.it )
when i bake pizza in it , the top heat can dry out pizza toppings and the bottom can be undercooked. and the bottom is in a color white also a little wet. i set the up temperature 250C,down temperature 250C.

i want my pizza clour brown and crisp a little?who can help me?and is there some little Tips when use the deck oven?

PS:i try to bake pizza with a pan,with a mesh,or directly on hearth,it tern out a same result—white color pizza bottom.should i rise the under temperature to 300C?

It sounds like you don’t have any or enough bottom heat in your oven.

I never have seen a Gam oven. Does it have adjustments for top and bottom Heat?

I don’t think there is any adjust of Temperature~

and it’s really ,if i bake in up"250C"down"265-270C",it’s so dry~
is i bake in up"235-240C"down"250-260C",it’s white~

That’s a first for me. I don’t think I’ve ever seen an oven that didn’t have a thermostatic temperature control. Can you provide any pictures?

Apparently you can set upper and lower temperatures. You appear to be applying way to much heat to the top of your pizzas.
Try using 1/2 the temperature on the top as you are using on the bottom and see what that produces.
