I have been given a great opportunity. A friend installed a brand new Bakers Pride GS805. I gave been baking pizza in my home Wolf gas oven for some time. I can make a good pie in my home oven. What advice can anyone on the forum give me about how to begin baking in the new GS805? What temp? How should the two dampers be set? Fully closed? Fully open?
