Oktoberfest Pizza Recipe?

Does anyone have a good Oktoberfest pizza recipe? Something with sauerkraut, stone ground, mustard, brats, etc…

We have always done a Rubin pizza, just top the pizza as you would build a Rubin sandwich.

We also do a reuben pizza. We make another one with a cheddar cheese beer sauce, brats, and jalapeno bacon.

If you want to make a rye crust for your Ruben pizza it’s pretty easy to do.
  1. Replace 20% of your flour with a dark rye flour.
  2. Increase the dough absorption by 5% (may need a little more depending upon the rye flour)
  3. Add a small amount of carmel coloring to the dough to give it a medium brown color.
  4. Optional, add some caraway seeds to the dough, about 1-ounce to 10-pounds of flour is a good level to start at.
    Remember, unless you have some other uses for a rye dough/crust don’t make too much of this.

We thought about doing a rye crust but didn’t figure we’d need a whole lot…instead we make rye bread crumbles and sprinkle them on the reuben pizza after cooking…delivers that rye/caraway flavor in a much simpler way
