Smoked Gouda

We have a local cheese producer who specializes in organic cheeses. They have a strong local following. He does not produce mozza but he does do white cheddar, parm, feta and makes a great smoked gouda. I would like to do a pizza dedicated to his cheeses. I was wondering does anyone do a pizza with smoked gouda as the primary cheese?
