Topping Temperatures

I am opening a pizza business in S…A. soon and need a little help with a few issues.
I was wondering what temperature should the topping be kept at before going on the pizzas, cheese, pepperoni, and so on.

And how do you stop a Sicilian dough from sticking to the pan? I put plenty of olive oil on the pan, but it still sticks, plus, it gets a little too crunchy.

Toppings have to be held at a foodsafe temperature. Typically this means they need to be refrigerated.

Have you seasoned your pans?
