WALK-IN TEMPERATURE?

What do you keep your walk-in temp. at. I have heard anything from 33 F to 40 F… I find my dough balls raise just enough at 35F.
 
Same temp for me. I also have those plastic shields that keep the cool in and the hot out when opening - makes for a good investment.

Maximum safe temp for a walkin is 39 ideal is 35 according to my health inspector buddy.

Of course, Daddio just throws his food out on the back deck 9 months out of the year since it’s so damned cold up there. It’s pretty bad when you’ve got to go into the walk-in to warm up, huh Daddio? -J_r0kk

Freezer temp should be -2 so I would even have to use my freezer to warm up from -39. the good thing is when i have to pick up frozen I don’t have to worry about leaving it in the car.

I am not sure which one of us has it better, I can just about cook in our heat about nine months out of the year!

The way I see it is I can always add more layers of clothes but you can only take so much off before it is against the law.
